Almond Butter Chocolate Chip Energy Bites

Soft, slightly sweet, and they actually keep you full. Not one of those snacks that leaves you hungry twenty minutes later.

I wanted something quick to grab during the day with a real balance of protein, carbs, fats and fiber. These check every box.

Good as a mid-day snack, a pre-workout bite, or something sweet after dinner without feeling like you overdid it.

Ingredients

  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup and honey, half and half
  • 1 large egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 cup oat flour, from blended oats
  • 1 cup oats
  • 7 scoops bone broth protein
  • 1/2 cup dark chocolate chips
  • 1/4 cup shredded coconut
  • 1/4 cup almond butter

Method

  1. Mix the wet ingredients, then stir in the dry ingredients until combined.
  2. Chill the dough for 20 to 30 minutes.
  3. Roll into about 20 bites.
  4. Bake at 350F for 8 to 10 minutes.
  5. Let cool slightly, then enjoy.
