Almond Coconut Protein Bars
If you like protein bars but not the price, these are my go-to copycat. A few whole-food ingredients, no baking, about 10 minutes of prep.
These have been a staple in our house for a long time. Only a few whole-food ingredients, no baking, and about ten minutes of prep. They are a good pre-workout bite or an evening sweet treat that will not leave you hungry twenty minutes later.
Ingredients
- 1/2 cup raw almonds
- 1/4 cup unsweetened coconut flakes
- 1 cup puffed rice cereal
- 1/2 cup almond butter
- 1/2 cup maple syrup
- 1/2 to 1 cup unflavored protein powder
- 1/4 cup mini chocolate chips (optional)
Method
- Pulse the almonds in a food processor until roughly chopped.
- Add the coconut, puffed rice, almond butter, maple syrup and protein powder.
- Blend until a crumbly but sticky dough forms.
- Pulse in the chocolate chips, if you are adding them.
- Press into a lined pan, or roll into balls.
- Chill for about 30 minutes, then slice into bars.

Make it yours
- Use a flavored protein powder for sweeter bars.
- Swap coconut flour for protein powder if you need to.
- Add chia or hemp seeds for extra fiber.
- Drizzle dark chocolate on top if you are feeling fancy.
