Basic Homemade Granola

A true staple in our house. Simple, but endlessly customizable: add your favorite nuts, dried fruit, cacao nibs, or whatever you are feeling.

I have been making this for years. The base is worth learning, because once you have it the variations are endless.

Ingredients

  • 4 cups oats, old fashioned or steel cut
  • 1 and 1/2 cups raw chopped walnuts
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup melted coconut oil
  • 1/4 cup pure maple syrup
  • 1/4 cup honey
  • 1 tsp pure vanilla extract

Method

  1. Combine all the ingredients in a bowl and stir.
  2. Press the granola flat onto a baking sheet lined with parchment paper.
  3. Bake at 350F for 20 to 25 minutes.
  4. Let it cool completely before breaking it into chunks.
  5. Pour into a bowl and enjoy.

Make it yours

  • Swap the walnuts for pecans, almonds or a mix.
  • Add dried fruit or cacao nibs after baking, not before.
  • Pressing it flat and leaving it undisturbed is what gives you clusters.
