Chocolate Date Coconut Dessert Balls
Gut friendly, bloat free, and proof that you can support digestion without giving up something sweet. For my IBS and SIBO clients who are tired of being told to just remove things.
If you are managing IBS or SIBO, the advice you usually get is a list of things to remove. That is exhausting and it is not the whole picture. You should be thriving, not restricting.
These are built to sit comfortably in a low FODMAP pattern while still tasting like dessert.
Low FODMAP is a structured, temporary approach and it works best with guidance. Portion sizes are what make a food low FODMAP, so if you are mid-elimination, check quantities against your own plan.
Ingredients
- Dates, portioned to stay within a low FODMAP serving
- Raw walnuts
- Unsweetened coconut flakes
- Cocoa or cacao powder
- A pinch of salt
- Vanilla extract
Method
- Pulse the walnuts in a food processor until roughly chopped.
- Add the dates, coconut, cocoa, salt and vanilla.
- Blend until the mixture holds together when you squeeze it.
- Roll into balls.
- Chill until firm, then store in an airtight container in the fridge.
Make it yours
- Portion size matters more than ingredient choice on a low FODMAP pattern. Dates are tolerated in small servings by many people and not by others.
- If you are in the elimination phase, check quantities against your own plan.
- Swap the walnuts for another low FODMAP nut if you prefer.
