Savory Sweet Potato Beef Bowl

This is a good example of building a meal on purpose rather than by accident. Each part is doing a job, and I have said which below.

Ingredients

  • Sweet potatoes, for fiber and carbohydrate
  • Ground beef, for protein and iron
  • Avocado, for healthy fats
  • Goat cheese, for fat and flavor
  • Kimchi, for gut-loving fermented food
  • Leafy greens
  • Olive oil, salt and pepper

Method

  1. Roast the cubed sweet potato until soft and caramelized at the edges.
  2. Brown the ground beef and season well.
  3. Build the bowl: greens first, then sweet potato and beef.
  4. Top with avocado, goat cheese and kimchi.
  5. Finish with a drizzle of olive oil.

Make it yours

  • Swap the beef for another protein you like.
  • Sauerkraut works in place of kimchi.
  • The combination is what matters: fiber plus protein plus fat gives you steadier energy and fewer cravings than the carbohydrate on its own.
